White Bean Soup


1 potato, diced
1 carrot, diced
½ onion, diced
4 cups water or broth
1 bay leaf
Pinch of celery seed
2 (15 ounce) cans navy beans
8 ounce can tomato sauce
1 tsp salt
¼ tsp pepper


Combine onion, carrot, potato, water, bay leaf and celery seed in a pot. Bring to a boil, and then simmer for 10 minutes.
Add beans, tomato sauce, salt and pepper. Heat to a boil and then simmer on low 20 minutes or more.
Spoon half of the soup into the blender and blend until smooth. Add blended soup back to soup pot and stir well.
