1/2 cup shortening
3/4 cup sugar
1 large egg
1/2 tsp vanilla
1/4 tsp salt
1 1/2 cup gluten-free flour blend
1 tsp cream of tartar
1/2 tsp baking soda
3/4 tsp xanthan gum
2 Tbsp sugar
2 tsp ground cinnamon
- Cream butter and sugar. Add eggs and vanilla. Beat until fluffy.
- In a separate bowl, mixes together dry ingredients. Gradually work dry ingredients into creamed mixture.
- Roll dough into 1″ balls. Roll balls in cinnamon and sugar mixture.
- Place on a greased cookie sheet 2 to 3″ apart. Bake 350 for 10 minutes.
