3/4 cup white rice flour
1 and 1/4 cup brown rice flour
1/2 cup white sorghum flour
1/2 cup tapioca flour
2 1/2 tsp guar (or xanthan) gum
1 Tbs yeast
1 tsp salt
2 Tbs sugar or sugar substitute
2 Tbs olive oil
1 tsp apple cider vinegar
Preheat oven to 350 degrees F.
Add liquid and dry ingredients together in a food processor (or whisk quickly in a bowl). The batter will be thick.
Spoon batter into a muffin pan for mini sandwich buns, or you can use tuna cans with the top and bottom cut out for a bigger bun. Or you can spoon out on a baking sheet for biscuits.
Bake around 15 minutes for small muffins/biscuits and 20 minutes for larger buns.
