1 cup GF peanut butter
3/4 cup sugar (white or brown)
1/4 teaspoon baking soda
- Mix all ingredients with a fork in a bowl until it begins to thicken.
- Scoop out 12 to 15 cookies to a cookie sheet. Bake at 350 for 11 minutes.
- Let sit on the pan for about five minutes after taking out of the oven, then carefully transfer them to a cooling rack.
You can use creamy or chunky peanut butter, but not a “natural” style, it’s too runny. This is fast and makes a small enough batch for even a single person to consume or share. Kids love to make this recipe because it doesn’t go beyond their attention span and no electrical appliances other than the oven are used.
