Molasses Spice Bread


1 cup cornmeal
1 cup GF flour blend
1/2 tsp xanthan
1 tsp salt
1 egg
1/3 cup oil
1 cup molasses
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cloves
1 tsp cinnamon
1/2 cup water


Mix dry ingredients.
Beat egg in oil, add molasses and water and combine.
Mix wet into dry.
Pour into lined loaf pan.
Bake at 350 degrees for 60 minutes, or until done.
Cool some then remove from pan and place on drying rack. Like any molasses cake the center will sink a bit.

Note: This recipe is scaled for 6000 ft. At sea level you may need another 1/2 tsp of baking powder, and possibly less water. Chopped crystallized ginger or dried apricots are a nice addition.
