Ham Fried Rice


1 cup diced ham
4 green onions, sliced
2 Tbsp vegetable oil
1 cup frozen peas and carrots, cooked
3 eggs scrambled and broken up
3 cups cooked rice
3 Tbsp gluten-free soy sauce


  1. In a large skillet or wok, sauté ham and onion in oil.
  2. Add remaining ingredients and cook to warm through.

Makes 6 cups.
