3 (8 ounce) packages cream cheese, softened
3/4 cup sugar
1 tsp vanilla
3 eggs, at room temperature
cookie crumb crust


  1. Mix cream cheese, sugar, and vanilla until smooth and creamy.
  2. Add eggs; mix until just blended.
  3. Pour mixture into 9-inch cookie crumb crust.
  4. Bake at 325 F for 45 minutes or until center is almost set. Cool. Refrigerate 3 or more hours.

Top with a can of cherry or blueberry pie filling.

To soften cream cheese, heat in the microwave for up to 30 seconds.
-To bring eggs to room temperature quickly, set them in a bowl of warm water.
