Cheese Pancakes


1 lb. farmer cheese, shredded
3 whole eggs
1 cup gluten-free flour blend
1/2 cup sugar
1/4 cup milk
1 Tbs vanilla sugar
1 Tbs potato starch
1 tsp lemon juice
cinnamon to taste


Heat skillet or griddle to 350 degrees
Mix all ingredients well with a fork
Drop by Tablespoons into lightly greased hot frying pan
Cook until golden brown then turn once for other side to turn golden brown
Add more oil to frying pan whenever necessary
