1 cup vegetables, cooked soft (I used a broccoli, cauliflower and carrot blend)
2 Tbsp finely diced fresh onion (or 1 tsp onion powder)
15 oz can black beans, rinsed and drained
¼ cup brown rice flour
- Smash vegetables, onion, and beans together with a potato masher.
- Stir in flour to thicken mixture.
- For each burger, spoon ¼ cup of the mixture onto hot nonstick griddle. Cook for 1 minute, then turn and flatten mixture with the back of a spatula to form a flat round patty. Cook until heated through, turning patty as needed to brown evenly on both sides.
Makes 8 burgers. Freeze extras. Cooked patties may be reheated on outdoor grill if desired.
