Bean and Rice Taco Filling

18 corn tortillas

Filling:
3 cups cooked rice
15 oz can kidney beans, rinsed and drained
15 oz can black beans, rinsed and drained
15 oz can whole corn, drained
1 medium green pepper, diced
2 medium carrots, grated
1 cup green onions, thinly sliced

Dressing:
¼ cup water + 2 tsp Ultra Gel
¼ cup cider vinegar
2 cloves garlic, crushed
½ tsp salt
½ tsp chili powder
¼ tsp pepper
¼ tsp cumin

Instructions

Stir dressing into bean mixture. Fills 18 taco shells.
