2 onions (slivered)
1 red pepper (chunked)
1 green pepper (chunked)
1 yellow pepper (chunked)
2 cups red wine
2 Tbs vinegar
6 garlic cloves (finely chopped)
3 Bay leaves
1 Tbs Thyme
28 oz plum Tomatoes
16 oz chopped tomatoes
1 lb gluten-free italian sausage
2 cups cooked shredded chicken
Heat 2-3 Tbs oil.
Add Onions and peppers.
Saute until the onions go transparent.
Remove and set aside.
Pour wine and vinegar into pan.
Add the garlic, bay leaf, thyme, and sugar.
Simmer until the wine is reduced by about half.
Add tomatoes and simmer until they start to break down.
Return veggies and simmer for 30 mins.
Brown sausage and cut into rings.
Add sausage and chicken.
Cook chicken until it is warm.
