1/2 cucumber, finely diced
1/2 red onion, finely diced
1 tomato, seeds removed and finely diced
1 Tbsp balsamic vinegar
1 bunch of flat leaf parsley
2/3 cup of cooled cooked quinoa, buckwheat or a combination
pepper to taste
2 cups of canned garbanzo beans, drained and rinsed
1/4 cup of corn (canned or frozen)
1/4 cup of diced red bell pepper
Fat Free Italian salad dressing (use your favorite GF version)
- Mix well all ingredients in a bowl. Season to taste with salt and pepper.
- Add enough dressing to barely coat mixture.
- Chill for at least an hour before serving to allow the flavors to blend.
Makes approximately 6 servings.
