Gluten-Free Tabouli

Ingredients

1/2 cucumber, finely diced
1/2 red onion, finely diced
1 tomato, seeds removed and finely diced
1 Tbsp balsamic vinegar
1 bunch of flat leaf parsley
2/3 cup of cooled cooked quinoa, buckwheat or a combination
pepper to taste
2 cups of canned garbanzo beans, drained and rinsed
1/4 cup of corn (canned or frozen)
1/4 cup of diced red bell pepper
Fat Free Italian salad dressing (use your favorite GF version)

Instructions

  1. Mix well all ingredients in a bowl. Season to taste with salt and pepper.
  2. Add enough dressing to barely coat mixture.
  3. Chill for at least an hour before serving to allow the flavors to blend.

Makes approximately 6 servings.
