3 cups cooked brown rice, cooled
1 bunch parsley, stemmed and chopped fine
1 small red onion, diced
1 ripe red tomato, seeded and chopped, or use grape tomatoes, cut in half
1 peeled, seeded and chopped cucumber
chopped pitted Greek or black olives (optional)
juice of one lemon
Sea salt and pepper to taste
2 tsp. chopped mint
1 clove chopped garlic
3 - 4 Tbsp Extra Virgin Olive Oil
- Mix all ingredients in a large bowl.
- Let marinate for several hours.
NOTE: This is like a Tabbouleh without the couscous.
