  Guilt-free Chocolate Cake

  Dry Ingredients:
1/3 C Soy flour
1/3 C Garbanzo flour
1/3 C Sorghum flour
1/3 C Tapioca flour
2/3 C Rice flour
2 T Corn starch
1/2 C powdered skim milk
1 tsp Xanthan gum
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 T powdered egg white
(or add one egg white to the liquids)
1/2 cup brown sugar
1 C Granulated Splenda
1/2 cup cocoa powder
1 C chopped nuts

Liquid ingredients:
1 C water
1 full square baking chocolate, melted
1 T Vinegar
1/2 C fruit puree or applesauce
2 Whole eggs
1 tsp Vanilla
   
  Instructions
 

Crave a treat? Got a chocolate addiction? Yet you are trying to keep the calories down and the nutrients up? Here's the cake for you.

  1. Preheat oven to 350 and grease cake pan(s)--1 9X13 or 2 8" round pans. Consider using parchment on the bottom for ease in removing the baked cake.
  2. Whisk all the dry ingredients (except nuts) together in a large mixing bowl.
  3. In the microwave, melt the square of chocolate in the cup of water. Don't let it get too hot--just enough to melt.
  4. In the blender, mix the rest of the liquid ingredients and add in the water/chocolate after it's cooled a little.
  5. Pour the blended liquids into the dry ingredients and whisk until it is thoroughly incorporated.
  6. Fold in the nuts
  7. Pour into greased cake pans
  8. Bake for 25-30 minutes at 350.

A piece of this along with a protein shake of simple vanilla whey protein powder will make a great afternoon or bedtime snack--low in fat and high in complex carbs and fiber.

we really enjoyed this on a hot summer afternoon or an energy boost along with a cold vanilla protien shake. The cake has surprisingly good texture and taste and I was glad I could feel good about eating it. It wasn't just 'not too wicked' but is actually nutritious. love that. Afriend served it to me, so I have yet to try the recipe myself.
