Eggs! What a great source of protein, but there are only so many ways you can fix them. Normal French toast is heavy on the carbs and light on the protein. This Bodybuilders’ French Toast turns out more like an omelet with bread in the middle. An additional benefit—it uses up some of that bread that has dried out as GF bread tends to do.
1. In a blender, mix all but the bread. 2. Pour egg mixture into a large, medium-hot skillet that you’ve sprayed with olive oil (trying to use those “good fats”). 3. Break the bread up into small chunks and scatter over the egg mixture. 4. Cover the pan and let it cook over medium heat until the bottom is set and slightly brown. 5. Flip it over like you would an omelet or pancake. 6. Let it cook until that side is also brown. 7. Slice in wedges. Depending on your caloric/carb needs, you can serve it with applesauce or other fruit puree or garnished with sliced berries. The ratio of eggs and bread can be adapted to meet your nutritional needs. As it is here, it serves me and my wife with my eating a larger portion.
Tip: if you are watching your carbs, a great “syrup” for pancakes, French toast, and waffles is the fiber supplement Metamucil. Yes, it is GF! Use the sugar-free kind. Mix it with less water and let it “thicken” a little. Heating it up also makes it thicker. Pour it on, or if you get it really thick, spread it like jelly. |
